Meet Maisie Collins, Founder of Hearth Bakery, a social enterprise and award-winning sourdough bakery and café at the heart of Hackney Wick.
Hearth is built on a simple but powerful mission: to create a better, more localised food system while supporting the community around them. Known for their wholemeal-led bakes and deep local roots, they’ve quickly become a staple of the tight-knit Hackney Wick community.
Maisie reflected on her first conversation with Notpla many moons ago, drawn to the “nerdy” potential of seaweed as such an unexplored and underutilised material.
