INGREDIENTS: For the syrup: 1 cup pumpkin purΓ©e 1 cup coconut sugar 1 cup water 3/4 tablespoon Pumpkin Spice mix (below) A pinch of vanilla extract For the latte: Unsweetened soy milk 1 to 2 shots of espresso 2-4 tablespoons Pumpkin Spice syrup Pumpkin Spice Mix: 2 tablespoons ground cinnamon 2 teaspoons ground ginger 1 teaspoon ground cloves 3/4 teaspoon ground nutmeg PREPARATION: In a saucepan, combine the pumpkin purΓ©e, coconut sugar, water, and Pumpkin Spice mix. Bring to a boil until everything is well combined. Remove from heat and stir in the vanilla extract. Brew the espresso into a mug, add the Pumpkin Spice syrup, and stir well. Heat the soy milk and pour it into the coffee.
