Recipe:
• 1 tbsp Extra Virgin Olive Oil, Chania Kritis PGI from Greece
• 1/4 tsp cumin seeds
• 1 bay leaf
• 2 tsp garlic from Netherlands, finely chopped
• 1 big onion, sliced
• 1/4 cup brinjal, chopped
• 1/4 cup Zucchini from Spain, chopped
• 1/4 cup red bell pepper, chopped
• 1/4 cup yellow bell pepper, chopped
• 1 cup Wild Heirloom Tomatoes from Netherlands, chopped
• 2–3 tbsp tomato paste
• Salt, Pepper to taste
• Mixed herbs, to taste
• 1/4 tsp garam masala
• 1/2 tsp Kashmiri red chilli powder
• 2 cups cooked rice
• 1 tsp olive oil, to drizzle
• Fresh Basil leaves from Italy
Method:
• Heat olive oil, add cumin seeds and bay leaf.
• Once the cumin seeds sizzle, add finely chopped Garlic from the Netherlands and sliced onions.
• Add brinjal, Zucchini from Spain, and red & yellow bell peppers. Cook until tender.
• Add Wild Heirloom Tomatoes from Netherlands, tomato paste, salt, pepper, and mixed herbs. Slow cook the veggies.
• Add garam masala and Kashmiri red chilli powder.
• Finally, add cooked rice and fresh Basil leaves from Italy. Mix well.
• Garnish with a drizzle of Extra Virgin Olive Oil, Chania Kritis PGI from Greece.
