Today is #WorldEggDay, so weโ€™re showing you how to make eggs โ€“ the plant-based way! ๐Ÿฅš Our mung bean omelette is cheap, healthy, nutritious and packed with plenty of protein and fibre. ๐Ÿ’ช Ingredients (makes 5 omelettes): 1 cup (200g) split mung beans (soaked overnight) 1/2 cup (120ml) unsweetened non-dairy milk 1/2 cup (120ml) aquafaba (chickpea water) 2 tbsp oil 2 tbsp nutritional yeast 1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp turmeric 1/2 tsp black salt (Kala Namak) 1 tsp baking powder Method: 1๏ธโƒฃ Blend all ingredients until smooth. 2๏ธโƒฃ Heat a non-stick pan with a little oil. 3๏ธโƒฃ Once the oil is hot, pour in 1/2 cup of the batter and spread thinly. 4๏ธโƒฃ Cook until bubbles form. 5๏ธโƒฃ Add your favourite filling, fold, and serve!
