Nostalgic Favourites with EU Tadka | Gnocchi in Basil Pesto by Chef Nehal Karkera| Episode 4
Chef Nehal Karkera brings to you an Italian classic, Gnocchi in Basil Pesto. These tender, pillowy potato dumplings are coated in a freshly made basil pesto crafted with authentic, high-quality European ingredients.
The fresh basil from Italy forms the aromatic base, Extra Virgin Olive Oil from Spain adds the peppery notes and Parmigiano Reggiano PDO from Italy gives it the perfect creamy finish
creating a pesto that tastes like it has come straight from Europe.
RECIPE
Ingredients:
For the Gnocchi
- 3-4 large potatoes, boiled
- Salt to taste
- Salted water for boiling
- ½ tsp crushed black pepper
- ½ tsp grated nutmeg
- 4-6 tbsp refined flour
- Extra flour for dusting
- For the Basil Pesto
- 1½ cup fresh Basil leaves from Italy
- 2 cloves of Garlic from Netherlands
- 2-3 tbsp roasted pine nuts
- Salt to taste
- ½ cup Extra Virgin Olive Oil from Spain
- 60 gm Parmigiano Reggiano PDO, cheese from Italy
- Juice of half a lemon
- ½ tsp crushed pepper
- 4 tbsp pasta water
Method:
- Mash the boiled potatoes while still warm using a grater or potato ricer.
- Mix in the flour, salt, and pepper to form a smooth dough.
- Dust with flour and shape into small pillow-like pieces.
- Boil in salted water until the gnocchi floats to the surface. It takes about 2 minutes. Remove and set aside.
- Shock fresh Basil leaves from Italy in ice-cold water for 2 minutes to retain their colour. Drain and pat dry.
- Blend the basil leaves, Parmigiano Reggiano PDO from Italy, Extra Virgin Olive Oil from Spain, roasted pine nuts, garlic from the Netherlands, salt, pepper, and lemon juice until smooth.
- In a pan, simmer reserved pasta water with 2-3 tbsp of the already prepared basil pesto.
- Add the cooked gnocchi and let it simmer for 2 minutes over low heat.
- Stir in cream (optional) and reduce until the sauce coats the gnocchi. Adjust the seasoning with salt and pepper to taste.
- Plate the gnocchi and garnish generously with grated Parmigiano Reggiano PDO from Italy and roasted pine nuts.
- Serve hot.
